 Black-Eyed Pea Salad
 
bullet1 1/2 cups cooked or canned black-eyed peas
bullet3/4 cup chopped green bell pepper
bullet1/2 cup chopped celery
bullet1/2 cup chopped red onion
bullet1/4 cup chopped onion
bullet1/4 cup vegetable oil
bullet1/4 cup sugar
bullet2 tablespoons cider vinegar
bullet1 clove garlic, minced
bullet1/2 teaspoon salt
bullet1/2 teaspoon freshly ground black pepper
bullet1/2 teaspoon hot sauce
 

 

In a large bowl, combine the black-eyed peas, green pepper, celery, and both onions.
In a small bowl, combine the oil, sugar, vinegar, garlic, salt, black pepper, and hot sauce. Pour the dressing over the peas. Toss. Let stand refrigerated overnight for the flavors to blend.

Yield: 4 to 5 servings
