Chop vegetables. Add to rapid boiling water. Boil
for 10 minutes. Add chicken and simmer until chicken
is done. Remove chicken, skin and debone. Strain
stock.
1 pound smoked sausage
4 T butter
Simmer sausage in small amount of water for 5
minutes. Drain and brown in a butter. Cut into
bite-size pieces. Reserve drippings.
1 cut chopped onion
1 cup chopped celery
1 cup chopped green onions
1/4 cup chopped bell pepper
1 minced clove garlic
1 pound can tomatoes
2 cups raw rice
1 T. sugar
cayenne pepper
black pepper
Sauté onion, celery, green onions, bell pepper in
reserved drippings until limp. Place into
large iron pot with chicken, sausage, garlic, rice,
3 cups of the reserved stock and seasonings. Cook
until rice is done.
